If you’re seeking a delicious, healthy recipe that will not only warm you up this fall, but is close to a full nutritious meal, then look no further. This turkey, bean and avocado soup is low calorie, low carb and full of protein. A perfect meal during the holiday season to help counter balance all of the treats floating around.
In addition, this soup is quick and easy make, and can be easily made into a large batch for freezing (for additional meals).
(This makes a very large batch, making it easy to freeze for later meals. However, if you do not wish to make a big batch, just use half of everything.) You can also use chicken instead of Turkey. Rotisserie chicken is quick and easy if you don’t have extra time.
- 14 Cups Chicken Broth
- 8 Cups Turkey Shredded (or chicken)
- 2 Cans Great northern beans drained
- 1 Jar Salsa Verde (12oz)
- 1 Tbsp. ground Cumin
Combine all ingredients in a large pot, cook on a medium high heat until it comes to a boil. Then reduce to a low medium heat, cover and let simmer for 5-10 minutes. This can also be cooked in a crock-pot.
Optional Toppings Are:
- Plain non-fat Greek yogurt
- Green onions
