Savory roasted yams is my new favorite side dish. Yams are a complex carb and taste amazing. This recipe is made with whole food ingredients. Also, be sure and measure out your portions….you don’t want to overdo your carb intake.
- Yams- 2-3
- Olive Oil or Vegetable broth (a low fat and heart healthier option) pour just enough to coat the yams so seasoning will stick (about 3 TBSP)
- Mrs. Dash (table blend is what I like to use) (to taste-I sprinkle on pretty heavily).
- Salt (to taste)
- Pepper (to taste)
- Garlic powder (to taste)
Pre-heat oven to 350 degrees. Optional to peel yams (I personally like leaving the peals on), then dice them into small cubes. Next place yams in giant ziplock bag with vegetable broth or olive oil and seasonings. Mix the bag all around and then poor onto cookie baking sheet. Bake for 40-50 minutes. Enjoy.
Measure out a serving: 1/2 Cup-1 Cup. You can use the leftovers to add to another dish. It also makes a great breakfast dish as a side or mixed into eggs.
