- 1 Cucumber seeded and chopped
- 2 Roma Tomatoes diced
- 5 TBSP Feta Cheese (use vegan cheese, 2 TB Nutritional Yeast or eliminate completely)
- 3 TBSP Lemon Juice
- 2 Sprigs of Fresh Dill chopped
- Salt & Pepper to taste
- Combine above ingredients into bowl and stir together.
