Chicken Stuffed Avocado is low carb and full of flavor. You will need some canned chicken (or you could use fresh shredded chicken), or to make it a plant based heart healthy option sub in chick peas instead, an avocado, fresh veggies and some spices.
- 12.5 oz. can of Chicken or you can use Tuna (Or for a heart healthy plant based option sub in chick peas)
- 2 Avocados (sliced in half) take a small spoonful of avocado out of each half and mix into the chicken salad.
- 1/2 red pepper chopped
- 1/2 jalapeno peppers
- 1/2 Cup Cilantro chopped
- 1 TB Lime Juice
- 1/8 Cup Mayo Or Veganaise
- Salt & Pepper to taste
Mix all ingredients together. Leave most of the avocado in the shell, but take a little scoop out to mix into the canned chicken. Then scoop the canned chicken into the avocado half. You may have extra chicken and can serve more people if you buy extra avocados.
