Southwestern Black Bean & Grilled Corn Salsa Salad Recipe

If you’re looking for a delicious, yet healthy southwestern treat, try this black bean and grilled corn salsa recipe!  It’s loaded with fiber, protein, healthy carbohydrates, nutrients and plenty of fresh flavor.

For best results, Jessica suggests topping salads and lean protein with this salsa to spice up your meals and to make eating clean fun.  However, for best results, one must avoid the chips.

  • 2 Ears Corn, Grilled and kernels cut from the cob (or 2 cans of corn works too)
  • 1 Large Tomato, Chopped
  • 1/2 onion chopped
  • 1 Handful Fresh Cilantro, Chopped
  • Juice of One Lime
  • Olive Oil
  • Salt and Pepper to Taste
  • 1 Avocado (optional)


  • Grill corn on the BBQ or in a skillet.
  • Mix beans and corn in a bowl.
  • Toss tomatoes, salt and pepper on top.
  • Mix in gently.
  • Add lime juice, cilantro, and a touch of olive oil.
  • Mix in gently.
  • Optional to add a chopped up avocado and 4 sliced green onions, or one small red onion.
  •  Refrigerate for at least 30 minutes before serving.
