Healthy Sloppy Joes

Recently, one of our incredible member’s provided us with a recipe that is not only delicious, but nutritious. He mentioned he was having trouble with getting his younger son to eat his vegetables. However, after coming up with his healthy sloppy joe recipe, fulfilling that micronutrient need was a breeze.

In honor of our Sunday food prep rituals, we wanted to share this recipe as a good source for Sunday meal prep and even a source for freezer meals.  We are certain this is a recipe your family will love, and can even help carry you through the week thanks to the extra portions.

Healthy Sloppy Joe Recipe:

Ingredients:

  • 1 lb ground Buffalo or Turkey
    1/3 C Chopped Onion
    1 Chopped Yellow Bell Pepper
    2 T Crushed Garlic (Fresh)
    3/4 C Ketchup*
    1/4 C Yellow Mustard*
    1 C Chopped Spinach
    1 C Chopped Cauliflower (finely chopped)
    1/3 C Chopped Broccoli (finely chopped)
    1/3 C Chopped Cilantro
    2 T Worcestershire
    2 T Chipotle Tobasco
    2 T Agave (optional)

Directions:

  • 1) Brown the ground meat over medium heat. Add onion, pepper & drain off liquids.
    2) Stir in all other ingredients, reduce heat. Cover and simmer for 20-30 minutes until cauliflower and broccoli is tender. Stir occasionally.
