Chicken Sandwich Recipe (Level 1-2)
Try this healthy stuffed chicken sandwich recipe filled with spinach, mushrooms, (minimal) pepper jack cheese and seasonings! For less carbs have the stuffed chicken solo for a meal or snack.
Stuffed Chicken Ingredients:
- 4 boneless skinless chicken breast
- 1 pound frozen chopped spinach thawed and drained
- 2 cups shredded pepper jack cheese (optional)
- 2 cups diced mushrooms
- Cajon seasoning
- 1 tsp. Olive oil
Take chicken breast and cut in half (hamburger style) leaving one side attached (like making an envelope). In a mixing bowl combine spinach, cheese, and mushrooms. Divide into 4 amounts. Fill each chicken breast with mixture. Sprinkle with salt and pepper. Close chicken like an envelope. Rub 1 tsp of olive oil on outside of chicken. Sprinkle with cajon seasoning. Place in a 9 x 13 glass baking dish. Bake at 375º for about 45 minutes or until chicken reaches 165º in the thickest part.
- 3 oz of stuffed chicken
- 1 cup spring mix salad
- 2 tsp. spicy mustard
- 1 whole wheat pita
Chop stuffed chicken. Open pita to create an evelope. Fill with chicken, lettuce, mustard. Enjoy!
