Jessica’s Crockpot Chicken Potato Kale Soup

Jessica’s Crockpot Chicken Potato Kale Soup is quick, easy and healthy.  The entire family will enjoy.  Simply place all ingredients into your crockpot in the morning.  Leave on low and by dinner time your entire house will smell amazing.

Ingredients:

  • Cream of chicken (98% fat free) 2 cans
  • 1 cup coconut milk
  • 2 cups water
  • 2 tsp. coconut oil
  • salt (to taste)
  • pepper (to taste)
  • Kirkland Organic No Salt Seasoning (1 TBSP. ) or Mrs. Dash
  • Chicken Tenderloins: 4
  • Sirloin Beef Patties: 2
  • Baby potatoes: 25-30
  • Baby Carrots: 2 handfuls
  • Sweet Yellow Onion: 1/2
  • Kale: 4 handfuls
  • Avocado (optional) : 1 sliced

Directions:

  • Place all ingredients into crockpot and cook on low 7-8 hours or on 4-5 hours. Stir occasionally.
  • As chicken and beef become tender break into small pieces
  • Optional to top with fresh sliced avocado
  • Enjoy!
  • Servings: 8-10
